Besitzer eines r enommierten Restaurants im L ondoner Stadtteil Farringdon die
Gelegenheit, ihre qualitätsvollen Zutaten auch in einem L aden geschäft anzubieten.
Die Nähe zu bekannten Märkten wie dem Smithfield-Fleischmarkt und dem Exmouth-
Markt sollte dann auch das Gestaltungskonzept beeinflussen: ein einfaches und klares
Angebot verschiedener hochwertiger und frischer Produkte. Fraher Architects ließen
sich in der Gestaltung vom schwarz-weißen Fliesenspiegel leiten, der von der Nut -
zung einer ehemaligen Metzgerei übrig geblieben war. So b estimmt nicht nur das
Farbkonzept in Schwarz-Weiß die neuen Räumlichkeiten, auch das Rautenmuster der
Fliesen wiederholt sich in der eigens entwickelten Möblierung des Backshops. Dazu
wurden einfache Spanplatten schwarz gebeizt und entwickeln nun ihren Reiz durch
die hellen Sc hnittkanten und Ausf räsungen von L ogo und R autenmuster. Weiße
Wände und ein dunk ler Holzboden bieten zusammen mit der individuellen Möb lie -
rung einen ang emessenen Rahmen für die ästhetisc hen Lebens mittel verpac kungen
und frisch zubereiteten Backwaren, während die angeschlossene Metzgerei in hygie-
nischem Weiß erstrahlt. In den Schaufenstern rautenförmig verspannte Schnüre die-
nen als zarte Fensterdekoration und einfacher, effektvoller Informationsträger.

T he shop sits next door to the Quality Chop House which has a reputation for excellent
cooking and good quality ingredients. The food had to b e displayed in a c lear and
simple manner, but pay reference to the utilitarian aesthetic of the food units surrounding
Smithfields meat market and Exmouth Market. The fit out elements such as the counter,
produce display and li ghting deserved to p ortray a te xtured and sli ghtly rough finish,
hence the display of end grain to all the plywood joinery. The edges of the shelves expose
the raw plywood to create a contrast with the blackened surfaces and give the impression
of packaging that has been sliced open. The deep black stain contrasts sharply with the
timber core of the units, reflecting the blackened character of labels commonly found on
timber food crates. The blackened stain plywood is reinforced by the use of cable lighting
that represents the packaging and the wrapping of the food produced. The use of exposed
bulbs reflects the raw nature of the food preparation that relies on exceptional raw ingre-
dients. Original black and white tiles behind the butcher's counter were retained and con-
tinue the basic palette used thr oughout the space. Access to the working kitchen of the
Quality Chop House restaurant was important to ensure that the fresh food and cake trays
are constantly re-stocked with baked good throughout the day. The project was delivered
to a tight deadline, with fabricating and installing the joinery within five days on site.
