D esign Hotel-Gründer Claus Sendlinger hat ein neues Hospitality-Projekt – und das
heißt Slow. Der Name ist Programm. Sendlinger und sein Partner Peter Conrads
setzen auf hohe Qualität, Tradition, Entschleunigung ... Zu Slow gehören bereits der
Bauernhof La Granja auf Ibiza und das Tulum Treehouse in Mexico. Mitten in der Co-
rona-Zeit kam in Berlin-Mitte die Bäckerei Sofi hinzu – ein Gemeinschaftsprojekt mit
dem dänischen Star-Gastronomen Frederik Bille Brahe. Der Standort ist gut gewählt.
Denn die Sophie-Gips-Höfe verkörpern mit ihrem Backstein-Fabrikcharme schon von
außen, worum es innen geht: Brote, Kuchen, Kekse, Focaccia, Croissants in handwerk-
licher Tradition – kurz, ein Gegenrezept zu den industrialisierten Brotfabriken und Bä-
ckereiketten unserer durchrationalisierten Zeit. Wer weiß heute noch, wie wild-pikant
Emmer und saftiger Champagnerroggen schmecken? So bodenständig, ehrlich und
„basic“ wie die Backwaren ist auch das Interieur – ebenfalls eine dänisch-deutsche Ko-
operation. Das „Rezept“ der Kopenhagener Architekten Mathias Mentze und Alexander
Vedel Ottenstein und des Augsburger Innenarchitekturbüros Dreimeta besteht aus er-
digen Tönen, Möbeln aus Ulmenholz und Details aus Walnussholz. Herzstück von Sofi
ist die offene Backstube. Bodenständig wirkt der Gemeinschaftstisch, und in handge-
fertigten Tassen und Vintage-Besteck zeigt sich die Liebe zum Detail.
T he design-hotel founder Claus Sendlinger has a new hospitality project called
Slow. The name says it all. Sendlinger and his partner Peter Conrads ephasize
high quality, tradition, deceleration ... Already part of Slow are the La Granja farm on
Ibiza and the Tulum Treehouse in Mexico. During the Corona pandemic, the Sofi ba-
kery in Berlin-Mitte has been added – a joint project with the Danish star chef Frederik
Bille Brahe. The location is well chosen because, with their brick-factory charm, al-
ready from the outside the Sophie-Gips-Höfe embody what the focus is on inside:
bread, cake, biscuits, focaccia, croissants made in craftsmanship tradition – in short,
an alternative recipe to the industrialized bread factories and bakery chains of our
thoroughly rationalized times. Today, who is today still familiar with the wild-spicy
taste of emmer wheat and of juicy “champagne” rye? Just as down-to-earth, honest
and “basic” as the goods is the interior – likewise a Danish-German cooperation. The
“recipe” of the Copenhagen architects Mathias Mentze and Alexander Vedel Ottenstein
and the Augsburg Dreimeta interior design firm consists of earthy shades, elm furni-
ture and walnut details. The hub of Sofi is the open bakery. The communal table looks
down-to-earth and the love of details shows in hand-drafted cups and vintage cutlery.
