VEGAN RESTAURANT VHY!
IN STUTTGART
The vhy! in western part of Stuttgart represents a new
contemporary gastronomic concept. From the cuisine to
the furnishings, everything is vegan! Birgit Martinez is re-
sponsible for the casual interior, her claim is: Creating At-
mosphere! Former national football team player Timo
Hildebrand, artist Tim Bengel and chef Christian Weber,
who run the vhy! together, put their trust in this concept.
S ince July 2021, vhy! has been displayed above the entrance of the
former trendy bar “Lichtblick”, and bright, inviting and friendly
light shines through the window front. You can see it at first glance: Bir-
git Martinez and her interior design team from Decor+More have done
a great job and given the interior a comprehensive makeover. Subtle
colours, slender furniture, light wood, lush green plants and radiant
lights characterise the new interior inspired by Scandinavian design. It
goes well with the healthy cuisine! A steel shelf painted white screens
the entrance. Towards the centrally located bar, a cosy seating area has
been created for groups and family celebrations. A space-defining
piece of furniture extends into the depths, sensibly dividing the large
guest area. On one side, there is the access to the bar and kitchen as
well as to the large terrace in the courtyard; on the other side, the
guests are seated at whitewashed wooden tables. The seating is ap-
propriately chosen – in the front area, white lacquered wooden clas-
sics; in the back area, sun-yellow PET shells on filigree metal frames.
The space-defining furniture itself accommodates additional seating ni-
ches at different heights, which are accessed either from one side or
the other and partly via small ladders. In addition, the central “tree
house” serves as a huge plant pendant from which large-leaved
greenery reaches out into the room. “In plants we trust” is the motto
of the restaurant. Architect Jason Martinez from Eicher Werkstätten was
responsible for the detailed planning and implementation of all the fix-
tures. The biggest challenge, however, was the selection and procure-
ment of materials. For a vegan restaurant, it should of course be vegan-
dyed textiles and upholstery fabrics, solvent-free varnishes and wall
paints and wood materials from sustainable production and with che-
mical-free treatment. After many nights of research, suitable solutions
were found for all problematic issues. With vegan cuisine and vegan
interiors, the vhy! is fully in line with the trend. The fact that vegan
does not mean having to make sacrifices, either on the plate or in
