G luten Tag, Sie wünschen? Fluffiges Brot mit knuspriger Kruste, buttrige Croissants
oder cremige Torten? Wer unter Zöliakie leidet, dem bleibt dieser Genuss oft ver-
wehrt. Wirklich gute glutenfreie Alternativen sind schwer zu finden. Bis jetzt! Eine kleine
Bäckerei in Barcelona hat es sich zur Aufgabe gemacht, ihre Kunden mit genau diesen
liebgewonnenen Spezialitäten zu versorgen. Mit einem knappen Budget verwandelte
Aramé Studio eine ehemalige Bankfiliale in die Gluten Tag Bakery! Der sparsame Umgang
mit den zur Verfügung stehenden Mitteln ließ das Team aus der Not eine Tugend machen:
Was sich nicht verwenden ließ, verschwand aus dem Bestand – was blieb, waren die Zei-
chen der Zeit. Roher Beton, Ziegel und Narben von Umnutzungen kamen zum Vorschein
und bilden die unvollkommene Basis für die notwendigen Eingriffe. Während im hinteren
Bereich die Küche einen Großteil der Grundfläche einnimmt, wurde für die zweite Heraus-
forderung eine unkonventionelle Lösung gefunden: Ein barrierefreier Sanitärraum wird in
der Mitte des Verkaufsraums platziert – versteckt in einem Kubus, um den sich der Ver-
kaufstresen legt. Als Kontrast zu den rauen Materialien erhält der neue Mittelpunkt eine
ausgesuchte Kombination aus Holz, Wellblech und Glas, gekrönt von einem kreisrunden
Beleuchtungssystem. Der bewusste Umgang mit den finanziellen Mitteln führte zugleich
zu einer nachhaltigen Lösung: So wenig wie möglich und so viel wie nötig!
G luten day! How can I help you? Fluffy bread with a crispy crust, buttery croissants
or creamy cakes – sounds delicious, right? Unfortunately, those suffering from
celiac disease are often denied such pleasures. Finding really good gluten-free alter-
natives can be challenging. But not anymore! A small bakery in Barcelona has made
it their mission to provide their customers with exactly these beloved specialties. With
a limited budget, Aramé Studio transformed a former bank branch into the Gluten Tag
Bakery! The economical use of the available funds allowed the team to make a virtue
out of necessity: anything that couldn’t be used was removed, and all that remained
were the signs of the times. Raw concrete, bricks and scars from previous alterations
became the imperfect foundation for necessary interventions. While the kitchen occu-
pies most of the rear area, an unconventional solution was found for the second chal-
lenge: a barrier-free restroom is placed in the middle of the sales area, concealed wit-
hin a cube, around which the sales counter wraps. Contrasting the rough materials, the
new focal point features a carefully chosen combination of wood, corrugated metal and
glass, topped off with a circular lighting system. This conscious use of available funds
also led to a sustainable solution: using as little as possible and as much as necessary!
