bakery here which has been designed by Luis Carbonell.
N ever before has the design of eateries been so conscientious-
ly attuned to food trends as it is nowadays. The search for
good, healthy and sustainable products has also shaped the Materia
bakery’s principle of focusing exclusively on the quality of the ingre-
dients and their preparations. Nothing but high-quality raw materials
are used in this hip shop in Mexico City and processed into absolute
superfoods. Guilty feelings when eating a delicious pastry? Far from it,
because here it is demonstrated that traditional baking is not necessa-
rily the opposite of a healthy and beneficial diet. Carbonell translated
the design approach that was intended to accommodate this attitude
directly into the materials chosen: The raw materials wood, steel and
concrete serve as protagonists and are complemented by an ingenious
colour concept: Natural brown and terracotta tones coat the furniture
and the surfaces in the interior and stand for earth, warmth, clay and
fire. Complementing this, the olive green of the windows and French
doors picks up on the green of the surroundings, the trees and plant
palette. The graphic exploration of the baguette shape plays with the
French motifs of the area and transfers the abstracted pattern to the
window frame and French doors, mirrors and even more to the clay
tiles on the back wall of the presentation- and retail space. Walls were
designed as exhibiting areas and product carriers. Some are movable
to separate or open up areas of the room. Two columns in the centre
of the room act as a supporting structure for a high, central concre-
te table. Carbonell designed this object together with the architect
Pablo Kobayashi. He was looking for a formal result as part of the
creation process itself and let the object take shape through gravity
playing with the concrete and the flexible formwork. Besides Pan de
Vida, the bread of life, the Materia bakery also sells brightly colou-
red, donut-like pastry gems. The photos shown here by photographer
Camila Cossio – who, incidentally, is the wife of the architect – do not
provide any clear clues, but social media sends its regards and invites
