ELRIKO DELICATESSEN
IN BAD SAULGAU
High-quality regional products play a major role in the
Elriko delicatessen. The perfect setting not only for an
attractive goods presentation but also for various
events is a half-timbered building located in the town
centre since 1465: Aboutlama turned the construction
in need of renovation into a striking venue where the
old and the new, indulgence and lightness easily meet.
A fter three conversions in 1679, 1890 and 1962, an extensive refur-
bishment had become necessary for preserving the, today, 557 years
old half-timbered building in the old town of Bad Saulgau. The team of
Aboutlama upgraded the construction in a careful way with the intention
of leaving the different historical layers discernible. For this purpose, the
shell construction was uncovered and, in the places wherever it was nee-
ded, the wood construction was replaced. As a contrast to the historical
stone walls and the wood beams, concrete was used for the new buil-
ding elements and the furniture with a clear design language and homo-
geneous colourfulness as well as surface structures. In addition, there
Grundriss Erdgeschoss • Ground floor plan are further natural materials such as lime plaster on the walls, blond or
mint-green glazed wood as well as bricks which, after the gutting, were
used again for new walls and for constructing display cubes. Intersecti-
ons between the old and the new were thus combined into something
like a collage and can still be noticed. “We have furthermore opened the
room structures as much as possible to allow the customers various in-
teresting perspectives”, Elena Laschewitsch and Yordanka Rotta of
Aboutlama explain. This resulted in spacious room sequences and an
opening in the ceiling which visually links the ground floor used as the
sales area with the restaurant zone on the upper level. A composition
consisting of an installation of green-facetted leaves by the French web
artist Julie Lansom and yellow swings for product presentation are sus-
pended in the newly created open space and adds playful accents in an
otherwise sedate-calm and subtly detailed sales landscape. A contrast is
provided by the design of the upper floor where back-lit linen curtains
envelop the external walls of the building. Visible half-timbering, lime
plaster, filigree metal shelves, furniture made of silver fir and stools con-
sisting of concrete complement the airy-looking backdrop and upgrade
the premises for the additional goods presentation just as much as for
dinner events. Not last likewise impressive here is the so-called Bohlen-
stube section whose wood-panelling has been restored to its original
