K leine Kaffeeröstereien sind en vogue! In Paris erfüllten sich die Brüder Charles und
Raphaël Corrot ihren Traum von der eigenen Bohnen-Boutique. Café Nuances heißt
ihr Coffee Shop in der Rue Danielle Casanova, unweit der prachtvollen Place Vendôme.
An der denkmalgeschützten Art Déco-Fassade weist der Schriftzug „beurre, laiterie,
œufs“ – Butter, Milchprodukte, Eier – noch immer auf die einstige Molkerei hin. Die hi-
storischen Art Déco-Elemente – Zementfliesen, Marmorwände, Spiegel und Glasdecke –
durchbrach das mit dem Umbau beauftragte junge Pariser Büro Uchronia mit einem be-
wusst herbeigeführten Stilbruch: mit Beton, Plexiglas, gebürstetem Edelstahl sowie Pa-
stellfarben und Knallorange. Der tiefe Grundriss besteht aus einer Enfilade von drei Räu-
men, die perspektivisch-dramaturgisch, flankiert von zickzackförmigen Regalen, in den
Tresen des Barista münden. Um feine Unterschiede dreht sich alles beim Kaffee. Daher
der Name Café Nuances. Die fünf aus Burundi, Guatemala, Brasilien, Kolumbien und
Äthiopien stammenden, fair gehandelten Arabica-Sorten werden grün geliefert, in Paris
geröstet und versprechen, ein Erlebnis für die Geschmacksnerven zu sein. „Wabi“ ent-
hält Nuancen von Pfirsich, Zitrone und Haselnuss! Sämtliche Röstungen werden als 250-
Gramm-Packungen wie Geschenke in kleinen Baumwollbeuteln auf den farbenfrohen
Regalen präsentiert. Ein sinnliches Erlebnis: optisch, olfaktorisch, geschmacklich!
S mall coffee roasteries are en vogue! In Paris, two brothers, Charles and Raphaël
Corrot, fulfilled their dream of opening their own bean boutique. Café Nuances is
the name of their coffee shop on Rue Danielle Casanova, situated not far from the ma-
gnificent Place Vendôme. On the listed Art Déco façade, the words “beurre, laiterie,
oeufs” – butter, dairy products, eggs – still refer to the building’s former use as a dairy.
The young Parisian office Uchronia, which was commissioned with the conversion, in-
tentionally contrasted the historical Art Deco elements – cement tiles, marble walls, mir-
rors and glass ceiling – with concrete, Plexiglas, brushed stainless steel in combination
with pastel colours and bright orange. The deep floor plan comprises an enfilade of
three rooms that culminate in the barista’s counter in a perspective-dramatic way, flan-
ked by zigzag-shaped shelving. Coffee is all about subtle differences. Hence the name
Café Nuances. The five fair-trade Arabica varieties from Burundi, Guatemala, Brazil, Co-
lombia and Ethiopia are delivered when still green, roasted in Paris and promise to be
an experience for the taste buds. “Wabi” contains nuances of peach, lemon and hazel-
nut! All roast varieties are presented in small, 250-gram cotton bags like gifts on the co-
lourful shelves. A sensual experience: for the eyes, the olfactory sensation and the taste!
