RESTAURANT BRUNNER
IN STUTTGART
„Traditionelle österreichische Küche wird When Austria comes to Swabia, characters that are not
all that dissimilar really meet, and elegance ingenious-
mit einem durchdachten und modernen ly blends with charming gruffness. Right in the middle –
Designkonzept serviert.“ “Downtown Stuggi” – a wide, culinary night-blue Alpine
sky opens up in a familiar canon of international, Austri-
Cyrus Ghanai an and southern German building culture. Interior desig-
ner Cyrus Ghanai is responsible for this.
A ustrian cuisine is fascinating, as is the new Brunner restaurant in
Stuttgart, which combines simplicity with artistry, uniting memories
of home with a view beyond the horizon. The name of the restaurant
comes from Irmgard and Werner Brunner, (grand)parents of the new
owner who laid the foundation for the family’s culinary tradition with
their first café in 1974. In a historic building that previously housed a
sushi restaurant, guests can now enjoy a modern interpretation of Austri-
an cuisine, embedded in a well-thought-out design concept implemented
over two floors. The restaurant offers around 60 seats spread over both
floors. The tables are covered with matte FENIX laminate, made from at
least 70 percent recycled paper, in a bronze-coloured metal tone with
black high-gloss edges. In the evening, the tables are covered with ele-
gant, purist tablecloths, and the atmosphere changes from “daily urban
life” to an upscale, stylish yet familiar, “cosy” evening atmosphere that
could also be found somewhere in a valley or on a mountain. You can
take a seat and relax on blue upholstered chairs and benches, stroke
velvety felt walls and feel very welcome and at home in these atmosphe-
rically lit rooms. And what tools can be used to bring Austrian style to the
Swabian metropolis with ease, without getting lost in folkloric details?
You focus on materials with a long cultural history and limit yourself
to just the essentials. For example, the material felt. Here, it not only
performs welcome acoustic functions, but also plays a valuable role in
creating atmosphere. It is actually a “poor” material that Joseph Beuys
had already successfully used to illustrate his idea of energy flow and
energy storage. The sea-blue stove tiles covering a column, a partition
wall and the counter bring the warmth of an Austrian stove into the
room in a visual and sensual way. This is a place where you can be
yourself, linger as long as you want and, above all, come back again.
The atmosphere speaks a constant, inviting and warm language that you
immediately internalize and never forget. In this wonderful dining room,
Austria comes tantalizingly close to Swabia: “An Guaden!” or perhaps
