G anz neu ist der Bauernladen des Pankratiushofes in Hechtsheim bei Mainz nicht,
das Herzstück des Hofes existiert schon seit vielen Jahren. Nun sollte er aber – nach
der Neugestaltung des Restaurants Pankratz 2020 – ebenfalls eine ästhetische Auffri-
schung und Anpassung durch das Team von Design in Architektur erhalten. Außerdem
wünschte sich die Bauherrschaft mehr Möglichkeiten zur Selbstbedienung und einen
stärkeren Fokus auf die Backwaren aus der eigenen Bäckerei. Nach Abbruch des ehema-
ligen Eingangsbereiches zwischen Treppe und Hauptgebäude sowie der Entkernung des
Bestandes lockt jetzt ein gewächshausähnliches Entrée, lichtdurchflutet und von Regalen
flankiert, in das nun deutlich aufgeräumte, helle Innere des Bauernladens. Das betont
nordisch-schlichte Interieur lässt die Farbigkeit der Lebensmittel für sich sprechen und
sorgt für optische Ruhe auf der rund 100 Quadratmeter großen Ladenfläche. Das Zentrum
bildet eine weiß geflieste Mittelinsel, die täglich frisches Obst und Gemüse präsentiert, bei
abendlichen Veranstaltungen aber auch als Sektbar dient. Mobile und flexible Obstwa-
gen für saisonabhängige Warenpräsentation sowie Einbauregale aus pulverbeschichtetem
Stahl ziehen sich durch den Laden bis hin zur gefliesten neuen Verkaufstheke für Back-
waren. Die wertige Farb- und Materialpalette aus heller Eiche, schwarzem Stahl, naturfar-
benen oder weißen Oberflächen wirkt nicht nur authentisch, sondern auch appetitlich.
T he farm shop of Pankratiushof in Hechtsheim is not entirely new; the centrepiece
of the farm has existed for many years. However, following the redesign of the
Pankratz restaurant in 2020, it was due for an aesthetic refresh and adaptation by the
Design in Architektur team. Additionally, the clients desired more self-service options
and a stronger focus on the baked goods from the in-house bakery. After the demolition
of the former entrance area between the stairs and the main building, as well as the gut-
ting of the existing structure, a greenhouse-like entrance now entices visitors. It is bathed
in natural light and flanked by shelves, leading into the now significantly tidied and
bright farm shop. The distinctly Nordic and plain interior design allows the colours of
the food to speak for themselves, providing visual calm in the approximately 100-squa-
re-metre retail space. The focal point is a white-tiled central island that showcases fresh
fruit and vegetables but also serves as a champagne bar during evening events. Mobile
and flexible fruit carts for the display of seasonal produce, as well as built-in shelves
made of powder-coated steel, are placed throughout the store up to the new tiled bakery
counter. The high-quality colour and material range, featuring light oak, black steel and
natural or white surfaces, exudes both an authentic and appetising appeal.
