B abette hat alle Hände voll zu tun. Von der Küche geht es ins Esszimmer und weiter
in die Backstube – getreu den innenarchitektonischen Leitmotiven ihrer drei neuen
Bäckereien in Madrid. In Wahrheit heißt die Frau, die El Horno de Babette (Babettes Ofen)
verantwortet, Bea Echeverría. Was 2008 als Schule begonnen hat, die Kurse für Amateure
wie auch Fachleute aus aller Welt anbietet, ist heute ein renommierter Betrieb. Ihr Team
beliefert einige Spitzenrestaurants der Stadt, dazu Feinkostgeschäfte, Cafés und Hotels.
Neben dem Geschäft mit der Gastronomie setzt Echeverría nun verstärkt auf den Direkt-
verkauf: Insgesamt gehören fünf Standorte zur Marke. Die jüngst eröffneten Filialen sind je
30 Quadratmeter groß und in einem Abstand von zwei bis drei Kilometern zueinander im
Stadtzentrum verteilt. Zooco Estudio hat jedem Verkaufsraum ein eigenes Thema gegeben,
sodass sich drei eigenständige, aber verwandte Entwürfe ergeben. Im hier gezeigten Projekt
bildet die Backstube das gestalterische Vorbild. Die Anmutung ist reduziert, die Material-
wahl erinnert unmittelbar ans Bäckerhandwerk. So kleiden weiße Fliesen in unterschied-
lichen quadratischen Formaten die Flächen aus. Im oberen Wanddrittel schließt grober
Rauputz an. Backwaren und Holzelemente – wie der runde Tisch als Warenpräsentation
und die an der Wand arrangierten Schneidebretter – vereinen sich zu einer Melange war-
mer Braunnuancen, die sich wirkungsvoll vom sonst zurückhaltenden Farbklang abheben.
B abette is rushed off her feet. From the kitchen to the dining room and on to the
bakery – in keeping with the interior design leitmotifs of her three new bakeries in
Madrid. In reality, the woman behind El Horno de Babette (Babette’s Oven) is Bea Eche-
verría. What began in 2008 as a school offering courses for both amateurs and profes-
sionals has since grown into a renowned business. Her team supplies some of the city’s
top restaurants, as well as delicatessens, cafés and hotels. In addition to the gastronomy
trade, Echeverría is now increasingly focusing on direct sales: the brand now has a total of
five locations. The recently opened branches each measure 30 square metres and located
two to three kilometres apart in the city centre. Zooco Estudio has given each salesroom
its own theme, resulting in three distinct yet related designs. In the project shown here,
the bakery itself served as the design model. The aesthetic is pared-back, with a choice
of materials that immediately evokes the baker’s craft. Surfaces are clad with white tiles
in various square formats, while the upper third of the wall is finished with roughcast.
Baked goods and wooden elements – such as the round display table and the cutting
boards arranged on the wall – combine to create a melange of warm brown shades,
standing out effectively against the otherwise restrained colour range.
