F ans der beliebten hawaiianischen Poké Bowls kennen Shobu Poké schon seit 2019
als Pop-up-Lokal im Stuttgarter Einkaufszentrum Gerber. Nun hat der Foodspot in
der verjüngten Calwer Passage – aufgrund der begrünten Fassade von Ingenhoven Archi-
tects zu neuer Bekanntheit gelangt – ein festes Zuhause gefunden. Wunsch der Betreiber
Ekrem Kaplan und René Ramon Stiefel war es, zwei Gastronomiekonzepte harmonisch
und eigenständig in einem Raum zu vereinen – ohne ein Hawaii-Klischee zu zitieren.
Cyrus Ghanai, der in Stuttgart schon etliche Gastronomien erfolgreich gestaltet hat, ent-
wickelte eine beide Konzepte verbindende, einheitliche Materialität. In die Wand- und
Thekenvertäfelung aus MDF wurde eine plisseeartige Struktur gefräst. Hinterleuchtet wird
die Konstruktion mittels LED. Den Boden ließ Ghanai mit Fliesen belegen, die das gestal-
terische Thema elegant fortführen. Für Orientierung im Raum sorgt die konsequent zwei-
geteilte Farbgebung. Das Poké erstrahlt in warmem Safranrot; das Deli in gedecktem Avo-
cadogrün. Die Thekenbretter aus Bambusholz fungieren als optische Klammer beider
Farbwelten. In die mondäne neu gestaltete Calwer Passage passt das Shobu Poké & Deli
perfekt: Das Poké findet wie selbstverständlich seinen Platz neben dem Deli-Konzept –
einer Mischung aus Delikatessen und Schnellrestaurant. Von der hawaiianischen Fusion
Kitchen inspiriert und mit frischen und gesunden Zutaten hergestellt. Keu a ka ʻono!
F ans of the popular Hawaiian poké bowls have known Shobu Poke since 2019 as a
pop-up location in Stuttgart’s Gerber shopping centre. Now the food spot has found
a permanent home in the rejuvenated Calwer Passage – which has gained new promi-
nence thanks to the green façade by Ingenhoven Architects. The wish of the operators
Ekrem Kaplan and René Ramon Stiefel was to combine two catering concepts harmonio-
usly and independently in one space – without quoting a Hawaii cliché. Cyrus Ghanai,
who has already successfully designed several restaurants in Stuttgart, developed a uni-
form materiality that unites both concepts. A pleated structure was milled into the wall
and counter panelling made of MDF. The construction is backlit by LEDs. Ghanai had the
floor covered with tiles that elegantly continue the design theme. The consistently divided
two-colour scheme facilitates orientation in the room. The Poké restaurant shines in a
warm saffron red; the Deli in a muted avocado green. The counter boards made of bam-
boo act as a visual link between the two colour worlds. The Shobu Poké & Deli blends in
perfectly with the sophisticated, newly designed Calwer Passage: the Poké naturally ad-
joins the Deli concept – a mixture of delicatessen and fast-food restaurant. Inspired by the
Hawaiian Fusion Kitchen and made with fresh and healthy ingredients. Keu a ka ʻono!
