M it dem El Bulli schrieben Ferran Adrià, der Erfinder der Molekular küche, und sein
Bruder Albert in den Nullerjahren Gourmetge schichte. Trotzdem entschieden sie
sich 2011, das Restaurant zu schließen. Sie hatten alles erreicht: drei Mi che lin-Sterne, vier-
mal in Folge „Bestes Restau rant der Welt“ und Ferran „Chefkoch des Jahr zehnts“! Der
kümmert sich heute vornehmlich um die Aus bildung des Nachwuchses in ner halb der El-
Bulli-Stiftung. Albert hingegen ist weiterhin als Gastronom tätig. Sechs Res taurants gehö -
ren ihm mittlerweile. Sie alle liegen im Stadtteil Paralelo in Barcelona, der unter Kennern
gern auch Adrià-Viertel genannt wird. Den neuesten Zuwachs bildet hier das im Januar er -
öffnete Enigma. Es ist das erste seiner Restaurants, in dem Albert Adrià wieder Moleku lar -
kü che anbietet. Für das entsprechende Ambiente holte er sich die Hilfe der Architekten
Rafael Aranda, Carme Pigem und Ramon Vilalta. Dass die drei nur wenige Wochen nach
der Eröffnung den Pritzker-Preis gewannen, spricht für Adriàs feinen Instinkt. Für ihren
Restaurant-Entwurf ließen sich die Architek ten nun spürbar von der Molekularküche
inspirieren: Ein feines, hinterleuchtetes Ge we be wabert wie eine Stickstoffwolke über den
Köpfen der Gäste, geschwungene Wände aus Strukturglasstreifen lassen die Raumgren zen
in einer Art optischem Dunst verschwimmen und der Boden aus individuell bedruckten
Neolith-Keramikplatten erzeugt den Eindruck, als laufe man über Nebelschwaden.
W ith the El Bulli restaurant Ferran Adrià, the inventor of the molecular cuisine, and
his brother Albert made gourmet history in the 2000s. Nevertheless they made
up their minds in 2011 to close the restaurant. They had achieved everything they want-
ed: three Michelin stars, “Best Restaurant in the World” four times in succession, and
Ferran was “Chef of the Decade”! Today, he primarily devotes himself to the training of
the young generation of chefs in the El Bulli Foundation. Albert, on the contrary, is still
a restaurant proprietor. He meanwhile owns six restaurants, which are all located in the
Paralelo District in Barcelona, among connoisseurs also called Adrià Quarter. The latest
addition to the restaurants is the Enigma, which was opened in January. It is the first of
his restaurants where Albert Adrià again serves molecular cuisine. He commissioned
the architects Rafael Aranda, Carme Pigem and Ramon Vilalta with the design of the cor-
responding ambience. The fact that the three of them won the Pritzker Prize only a few
weeks after the opening speaks for Adrià’s fine instinct. For the restaurant design, the
architects noticeably drew inspiration from molecular cuisine: a delicate, backlit fabric
billows like a cloud of nitrogen above the heads of the guests, let the spatial boundaries
become blurred in some kind of visual haze, and the floor made of individually printed
neolith ceramic tiles creates the impression as if walking across wafts of mist.
