F ür die Umnutzung von Geschäftsräumen eines ehemaligen Fabrikkomplexes in
eine Mikrobrauerei mit Gastronomiefläche wollten die Betreiber der Boréale
Brewery ihren nachhaltigen Bierherstellungsansatz auf die Schankraumgestaltung
übertragen: Beauftragt wurde das nur ein paar Straßen weiter ansässige Team von
L’Abri, das einen „atmosphärischen Treffpunkt für Bierliebhaber“ schaffen sollte. Um
das neue Sudhaus effizient zu strukturieren, zogen die Planer über den Kühlkam-
mern für die Bierfasslagerung ein Zwischengeschoss ein. Die übrigen zwei Drittel
der 750 Quadratmeter fassenden Bestandshalle wurden durch eine Glastrennwand
mit Eichenholzprofilen und fest integrierten Sitzbänken von der Produktion abge-
trennt und bilden den sogenannten Brausaal für die Bewirtung von bis zu 60 Gästen.
Ausgebaut wurde der Saal mit in der Region vorkommenden Materialien wie Gra-
nit, Kalkputz und Eichenholz. Sämtliche Möbel wurden zudem von ortsansässigen
Handwerkern gefertigt und schaffen einen geradlinigen Look in neutralen Grau- und
warmen Cognactönen. Feinkörniger Putz, polierte Holzoberflächen, unbehandelte
Stahlbetonstützen und offen verlegte Leitungen vervollständigen den Raumeindruck,
der sich zwar wertig und gastlich präsentiert, schlussendlich aber weitestgehend
hinter den alles beherrschenden Blick in die Produktion zurücktritt. hs
F or the conversion of the business premises of a former factory complex into a
microbrewery with catering space, the operators of the Boréale brewery wanted to
transfer their sustainable beer-production approach to the design of the taproom: the team
from L’Abri, based just a few streets away, was commissioned to create an “atmospheric
meeting place for beer lovers” and a unique venue highlighting eco-responsibility and
local know-how at the same time since the circular strategy was to be included in the pro-
ject. In order to structure the new brewhouse efficiently, the planners designed and built
a mezzanine floor above the cooling chambers for storing the beer barrels. The remaining
two thirds of the existing 750-square-metre hall were separated from the production area
by a glass partition wall with oak profiles and permanently integrated benches, forming
the so-called brewing hall offering space for entertaining up to 60 guests. The hall was
built using predominantly local materials such as granite, lime plaster and oak wood.
All the furniture was also made by local craftsmen and creates a straightforward look
in neutral grey and warm cognac tones. Fine-grained plaster, polished wooden surfaces,
untreated reinforced concrete supports and exposed pipework complete the impression
of the space, which presents itself as high-quality and cosy, but ultimately takes a back
