A lfonso Cadena ist Koch, sein Bruder Ignacio Architekt – und es ist nicht ihr erstes
gemein sames Projekt. Bereits zuvor bewiesen sie mit dem Restaurant Hueso (siehe
AIT 06/2015), das sich durch seine Gestaltung mit Tier knochen und Küchenutensilien aus-
zeichnet, Mut zum Ungewöhnlichen. Ebenso unverwechselbar ist das CarbónCabrón.
Schon die Material wahl zeigt, worum es in diesem Projekt geht: Holz, gebrannte Back -
steine, roher Stahl – Thema ist die transformierende Kraft des Feuers, Herzstück der Asa -
dor de Carbón (zu deutsch: Holzkohle grill). Das Grillhaus liegt im mexikanischen Bundes -
staat Baja Cali fornia, wo Meer und Wüste aufeinandertreffen und die Cadenas ihre Kind -
heit verbrachten. Noch heute fühlen sie sich durch die Landschaft ihrer Heimat geprägt.
Das Restaurant besteht aus einer offenen Küche und einem großen Raum, in dem durch
eine eingestellte Holz struktur fünf abgetrennte Ess bereiche definiert werden. Wie in
einem Regal lagern hier 6300 Holzstämme und -scheite. Der gesamte rustikale Innenraum
ist in einer düster monochromen Farbstimmung gehalten. Essen wird im Carbón Cabrón
zum Erlebnis für alle Sinne: In dem schwach beleuchteten Restau rant nimmt der Gast die
Atmosphäre des Raums, die Textur und den Geruch des Holzes sowie den Ge schmack der
gewählten Kost besonders intensiv wahr. Konsequent und bis ins Detail gelang Cadena +
Asociados die Umsetzung des Konzeptes zu einem sinnlich kontemplativen Erlebnisraum.
A lfonso Cadena is a chef, his brother Ignacio is an architect - and this is not their first
joint project. With the Hueso Restaurant (see AIT 06/2015), which is characterised by
its design using animal bones and kitchen utensils, they had already shown courage to
do the unusual. CarbónCabrón is just as unmistakable. The choice of materials alone
shows what this project is all about: wood, fired bricks, raw steel - the theme is the trans-
forming power of fire, the heart of the Asador de Carbón ("charcoal grill" in English). The
grill house is located in the Mexican state of Baja California, where sea and desert come
together and where the Cadena brothers spent their childhood. Even today, they still feel
influenced by the landscape of their homeland. The restaurant consists of an open
kitchen and a large room where five separate dining areas are defined by an inserted
wooden structure. 6300 logs are stored here like on a shelf. The entire rustic interior is
designed in a dark monochrome colour mood. Dining at the CarbónCabrón is an experi-
ence for all the senses: in the dimly lit restaurant, the guest perceives the atmosphere of
the room, the texture and smell of wood as well as the taste of the chosen food particu-
larly intensively. Cadena + Asociados succeeded in implementing the concept consistent-
ly and down to the last detail to create a sensual-contemplative experience space.
